A very tasty bucket of finger licking queen crab and beautiful suculent lobster cooked till delicious in a tasty garlic butter sauce. What a feast!!! Looking forward till next time! 


What’s in Crab ? This ten-legged friend is high in protein and Full of goodness. It has trace elements of selenium and chromium as well as calcium, copper and excellent source of Omega 3 fatty acids, which can be very good for people suffering from arthritis and high  blood pressure. Selenium is a powerful antioxidant and trace mineral. Crab is a low calorie food with only 128 calories in 100g and saturated fat – which makes it good for the heart!

What’s in Lobster? Lobster contains iodine, selenium, and B vitamins. It is great as a lean protein and can be cooked in several ways. It contains less calories, cholesterol and fat than other proteins like red meat and shrimp. 


Lobster in Garlic butter and Parsley:

8 tbsp. unsalted butter, softened

2 tbsp. finely chopped parsley

1 1⁄2 tsp. crushed red chile flakes

4 cloves garlic, finely chopped

Zest of 1 lemon

Kosher salt and freshly ground black pepper, to taste

1 live lobster (about 1 to 1 1⁄2 lb.)

1⁄4 cup olive oil

Combine butter, parsley, chile flakes, garlic, lemon zest, salt, and pepper in a bowl; set aside. Using a cleaver, split lobster in half lengthwise through its head and tail. Scoop out and discard the yellow-green tomalley and break off claws. Transfer lobster halves, shell side down, to a baking sheet; crack claws and place them on the baking sheet. Drizzle halves and claws with oil, and season with salt and pepper.

Heat a charcoal grill or set a gas grill to high; bank coals or turn off burner on one side (see “Grilling 101”). Place lobster halves, flesh side down, and claws on hottest part of grill; cook until slightly charred, 2-3 minutes. Flip lobster over and using a spoon, spread lobster with the garlic-parsley butter; continue grilling until lobster meat is tender, 3-5 minutes more.

So true! I loved reading this article and thought I had to share it with you all.  

Great words of wisdom from an elderly lady. We could all learn something from her:A 92-year-old, petite, well-poised and proud lady, who is fully dressed each morning by eight o’clock, with her hair fashionably coifed and makeup perfectly applied, even though she is legally blind, moved to a nursing home today. Her husband of 70 years recently passed away, making the move necessary.

After many hours of waiting patiently in the lobby of the nursing home, she smiled sweetly when told her room was ready. As she maneuvered her walker to the elevator, I provided a visual description of her tiny room, including the eyelet sheets that had been hung on her window. “I love it,” she stated with the enthusiasm of an eight-year-old having just been presented with a new puppy.

“Mrs. Jones, you haven’t seen the room …. just wait.”

“That doesn’t have anything to do with it,” she replied. “Happiness is something you decide on ahead of time. Whether I like my room or not doesn’t depend on how the furniture is arranged, it’s how I arrange my mind. I already decided to love it. It’s a decision I make every morning when I wake up. I have a choice; I can spend the day in bed recounting the difficulty I have with the parts of my body that no longer work, or get out of bed and be thankful for the ones that do. Each day is a gift, and as long as my eyes open I’ll focus on the new day and all the happy memories I’ve stored away, just for this time in my life.”

She went on to explain, “Old age is like a bank account, you withdraw from what you’ve put in. So, my advice to you would be to deposit a lot of happiness in the bank account of memories Thank you for your part in filling my Memory bank. I am still depositing.”

And with a smile, she said: “Remember the five simple rules to be happy:

1. Free your heart from hatred.

2. Free your mind from worries.

3. Live simply.

4. Give more.

5. Expect less

Fresh oysters

Oysters are full of nutrients and minerals, they are low in cholesterol and great for weight loss. They also help blood circulation and aid in wound healing. Futhermore they  improve mood and regulate stress levels – hence the well documented aphrodisiac qualities. 

Srilankan sea bream recipe:

INGREDIENTS:

1 tablespoon vegetable oil

1 medium onion, thinly sliced

4 garlic cloves, minced

4 teaspoons curry powder

2 13 1/2- to 14-ounce cans unsweetened coconut milk

1 cup chicken stock or canned low-salt chicken broth

2 medium carrots, peeled, cut into matchstick-size pieces

4 5- to 6-ounce sea bass fillets

4 green onions, thinly sliced

PREPARATION

Heat oil in heavy medium saucepan over medium heat. Add onion, garlic and curry powder. Sauté mixture until onions are translucent, about 4 minutes. Mix in coconut milk and stock; bring to boil. Reduce heat to medium-high and boil until liquid is reduced to thin sauce consistency, about 50 minutes. Add carrots; simmer until crisp-tender, about 3 minutes. Remove from heat; keep warm.

Preheat broiler. Place fish on baking sheet; sprinkle with salt and pepper. Broil fish until just opaque in center, about 8 minutes. Using metal spatula, transfer fish to plates. Spoon sauce over fish. Sprinkle with green

If you are looking for enlightenment first you must find alignment.           
You must understand the balance of the world is in the stability of the earth, the weightlessness of the wind, the freedom of the water, the ruthlessness of fire, and the imperfections of the soul. 

You must shed your karmic weight and cast it into the water so you may see that you are both the fool and the world. You know nothing and you know everything. 

Then you must find you as someone else. You must understand that someone else is also yourself.  

When you fully understand these things then you will see the window, and within which the reflection of your mind. As you open it light surges forth and the reflection disappears. 

On the other side you will come across the well. 

When you are ready you will climb to the bottom and you will find the vessel.

Reach inside, you will feel connected to many bodies. At first you may feel overwhelmed, but know that you will live many lives. Some lives will build you up and others will wear you down, but it is in their entirety that you will find the balance of your soul.   

Once you have chosen a body, you will come across a tree with roots reaching into a pool of water. From the water emits a beautiful light. Submerge yourself in the water and feel the supreme weightlessness of rebirth.

Know that you are greater than yourself.  

Kids Heaven! 

This October an unexpected holiday break at The Sofitel Resort located on the palm Dubai has come our way and all  I can say is thank you life!!!  😉 thank you for bringing us here!  At the end of the day things always turn out for the best! 

October weather in Dubai seems to be ideal these days, at 34 degrees the days are best spent lounging by the pool and the nights around 25 degrees are perfect for visiting beautiful terraces and sipping sweet cocktails infused with lemongrass under the moonlight! 

The Sofitel Resort and Spa is not only a beautiful 5star Resort but it is also a paradise for kids. The kids club is ideally located in the center of the resort with several pools surrounding it which makes it an easy two minute walk from anywhere around. The staff are very friendly and bubbly and enjoy their time there as much as the little ones.

 T.shirt making  and face painting are a few of the many fun activities that my son has taken part in at the kids club. For older kids there is a cinema on the second floor with movies showing through out the day… So if it gets too hot outside and your little one is not afraid of the dark then it’s perfect to sit back and enjoy the show. 

The toddler pool just outside the kids club is so much fun, with sand pits and fountains for kids to splash around in and cool off. 

What I liked about this Resort:
